Beyond the Headlines, Stereotypes & Dogma: Meat Intake & Recommendations

The public health mantra is often “cut back on beef for health” yet most Americans view beef as “nutritious” when part of a balanced diet. Media headlines often stereotype beef as huge steaks and gooey cheeseburgers – but is that portrayal accurate when it comes to the cuts of meat at the grocery store and the most common ways people consume meat on a regular basis? As the plant-based trend continues to grow, are consumers looking to replace meat in the diet with plant proteins or can meat and plants coexist in a healthful way on our plates?

Shalene McNeill PhD, RDN

Shalene McNeill

Dr. Shalene McNeill is a registered dietitian, nutrition scientist and the Executive Director of Nutrition Science, Health and Wellness for the National Cattlemen’s Beef Association. In her role, she leads research and science communications on beef’s role in healthy, active lifestyles.

For nearly 20 years, Dr. McNeill has been dedicated to researching and applying evidence on the importance of nourishing, wholesome foods through numerous authored publications and a multitude of feature stories and guest commentaries.

Dr. McNeill values science-based communication and works to promote healthier lifestyles. She has contributed her expertise and insights to several audiences including nutrition scientists, registered dietitians, pediatricians and family physicians, fitness professionals, media and the agriculture community.

As a life-long Texan who grew up in agriculture, Dr. McNeill considers it a privilege to work on behalf of America’s farmers and ranchers. She appreciates living in a rural community alongside farmers and ranchers, where her children are learning and being shaped by agricultural values such as stewardship, strong work ethics and accountability.

Dr. McNeill holds a bachelor’s degree in biomedical science and a doctorate in human nutrition, both from Texas A&M University.

There is a huge disconnect between the public health stereotypes about beef and what motivates people to eat beef and how they really feel about it. When beef is included in a healthy diet, beef boosts health. And for many consumers it makes eating a healthy diet a lot more do-able – and even enjoyable. That’s something we often don’t focus on enough: enjoying healthier lifestyles with foods we love, like beef.”
