Mickey Rubin, PhD

Dr. Mickey Rubin is the Executive Director of the Egg Nutrition Center in the Nutrition Science and Education Division of the American Egg Board. He graduated from Indiana University-Bloomington with a Bachelor of Science degree in Kinesiology, then earned a Master’s Degree in Exercise and Sport Science from the University of Memphis, and later earning a Ph.D. in Exercise Physiology from the University of Connecticut where his research interests included exercise endocrinology, sports nutrition, and the effects of dietary interventions on cardiometabolic health outcomes.

Eggs fit into heart-healthy eating patterns and have important nutrients for brain health including lutein and choline, which is a nutrient under-consumed by all Americans. Eggs pair well with so many foods and they are a ‘carrier’ for under consumed vegetables. In fact, eggs can help you absorb the nutrients found in plant foods such as vitamin E and carotenoids.” – Dr. Mickey Rubin

Kitty Broihier, MS, RD, LD

Kitty Broihier is the Nutrition Advisor and spokesperson for the Wild Blueberry Association of North America. She is also the owner of NutriComm Inc, a food and nutrition communications company in Portland, Maine. She is a Registered and Licensed Dietitian with over 25 years of experience working in the food and nutrition communications field. Ms. Broihier received her Bachelor of Science degree in Dietetics from Michigan State University and a Master of Science degree in Nutrition Communications from Boston University. Previously on the editorial staff of Good Housekeeping magazine, she has authored hundreds of consumer and trade articles, and is the co-author of several cookbooks. Kitty has also been an adjunct instructor in the Nutrition and Dietetics Dept at a local community college for nearly 10 years. She is an active member of the Academy of Nutrition and Dietetics (AND) and served on the Board of Directors for the Maine Academy of Nutrition and Dietetics for over 15 years, including two terms as President.
